That’s where the herb butter under the skin is… anyway, “top” is a relative term because that’s the ventral side and dorsal is not necessarily top.. You didn’t take comparative vertebrate anatomy, did you?
Chicken feet very nice and tasty.
I like roasting birds that way. I can never seem to get enough bird in my life. What’s hard though is finding turkeys and ducks that haven’t been frozen. And that don’t cost an arm and a leg.
