Chicken Foot Soup


When you use chicken feet to make stock, you are getting a lot of cartilage, which will make a very rich broth. Ever hear of calf’s-foot jelly? Same principal.  

I changed the spelling for Ukelero..

  1. 1-2 lbs of chicken feet
    a carrot, chopped
    one yellow onion, quartered, leave the skin on
    4 clove of garlic, crushed
    2 bay leaves
    1 tsp caribe chile or one chile japonesa.
    water to cover.

  2. Calf’s foot jelly. Fat calves are what make cowboys happy and ranchers rich.
    Cankles are when there’s no differentiation between calf and ankle. “Not the slim type I prefer” the ginger man
