I yam that I yam.

**Spinach capitol of the world.** Or so they said.

 

This was in the palm studded esplanade in the middle of our town. 

I like to cook spinach (or other greens) with pine nuts and a little salsa verde (usually made with tomatillos & roasted poblanos).
