Italian veg cookbooks..

Here are two I have and like very much:

Fagioli (beans, mainly) Great soups.

and
Contorni: Authentic Italian Side Dishes for All Seasons
by Susan Simon. This one has “topi morti” (dead mice) or roasted red peppers stuffed with eggplant.

Oona gave these to me for Christmas several years back. Great recipes.
